Fish LaksaFish Laksa


  • 2 fillets firm, white fish
  • 1 Tbsp olive oil
  • 1 can coconut milk
  • 750ml chicken broth
  • 3 cloves garlic, finely chopped
  • 1 tsp grated fresh ginger
  • 2 tsp sweet chilli sauce
  • 1 ½ tsp dried coriander
  • 1 Tbsp fish sauce
  • 100g green beans
  • 300g Udon noodles
  • Salt & pepper to taste


  1. Cook the fish gently in olive oil in a pan until just cooked right through.
  2. In a separate pot, combine the coconut milk and chicken broth then mix in the garlic, ginger, sweet chilli sauce, fish sauce and coriander.
  3. Flake the cooked fish into bite sized pieces then add to the liquids along with the green beans and Udon noodles.
  4. Bring to the boil and season with salt and pepper to your liking.
  5. Serve in large bowls with your favourite toasted bread.
