Ingredients

  • 4 fish fillets
  • 1 can coconut milk
  • 1 tsp Thai green curry paste
  • 2 tsp sea salt
  • 1 medium onion, chopped
  • ¼ cup fresh coriander, chopped
  • Pepper to season
  • 1½ cups Basmati rice

Method

  1. Preheat oven to 180ºC.
  2. Mix coconut milk and curry paste together.
  3. Place fillets in a flat baking dish and pour coconut mixture over the top.
  4. Sprinkle with sea salt then add the onion evenly across the fillets.
  5. Grind the black pepper over the top then sprinkle over the chopped coriander.
  6. Bake for 20 - 25 minutes until the fish is cooked right through.
  7. While it is baking, bring a pot with 4 cups of water to the boil.
  8. Wash the rice to remove the starch then add it to the boiling water with a pinch or two of salt.
  9. Cook rice until soft then drain excess water and leave to sit for a few minutes.
  10. Stir the rice to make it fluffy.
  11. Serve the fish curry over the rice.
