Salmon With Mustard-Dill Sauce

Ingredients

  • 8 small salmon steaks
  • 1 cup dry white wine
  • ¼ cup minced shallots
  • 2 tsp sea salt
  • 3 Tbsp fresh dill, chopped
  • ¼ cup non-fat plain yoghurt
  • ¼ cup Dijon mustard
  • 1 Tbsp light honey
  • ¼ cup freshly squeezed lemon juice

Method

  1. Preheat oven to 180ºC.
  2. Place salmon steaks in a baking dish just large enough to hold them without crowding.
  3. Pour the wine over salmon then sprinkle with shallots and sea salt.
  4. Bake for 15 - 20 minutes, basting frequently with wine from the pan.
  5. While salmon is baking, in a small bowl, blend the dill, yoghurt, mustard, honey and lemon juice until smooth.
  6. Add any pan juices from the salmon once it has finished cooking and stir again.
  7. Drizzle liberally over the salmon steaks before serving.
