Orange Ginger FishIngredients

  • 8 medium fish fillets
  • 1/3 cup soy sauce
  • 1/3 cup sherry
  • 1/3 cup orange juice
  • 2 tsp dried ginger
  • 2 tsp minced garlic
  • 2 Tbsp lemon thyme, freshly chopped
  • 10 oz can mandarins

Method

  1. Preheat oven to 180ºC.
  2. Mix the Soy sauce, Sherry, orange juice, ginger, garlic and thyme together in an oven dish and marinate the fish fillets in it for 6 hours or overnight.
  3. Bake the fish in the marinade for 20 minutes.
  4. Add the drained mandarins over the top of the fish halfway through baking.
  5. Serve with rice or noodles if desired.
